The thing is “PORTO Products Categories” widget has been depreciated in the theme, We introduced a new widget called “PORTO POST GRID”.
This widget can be used to showcase the POST, Products, and Product Categories, Portfolios, Services, and other types of posts as well. Second, Regarding creating a “Post Type” Basically, the type builder allows you to create a post type design as per your need.

These are the filter tags. You can edit/remove them from the Dashboard >> AI Product Review Summary >> Tags >> Check the screenshot to understand better: https://postimg.cc/CZP8vhL5

Thanks for the detailed explanation with screenshots to understand your issue.
The thing is you are configuring the filters from the right place (Appearance >> Widgets >> Woo Category Sidebar.)
For the categories filter you can use the “Products categories widget”
For the attributes, you can use the “Filter Product by attributes”This will allow you to show the filter content on the sidebar.
However, the style on every demo is changed using custom CSS code. As you are aware the filter widgets in the widgets area don’t provide style options. In each demo of our theme, we added some custom CSS code to design the content. Just like this, you can configure the design using CSS code in the PORTO >> Theme Options >> Skins >> Custom CSS.

Regarding the header template condition set to all, You can remove the condition, and then set other conditions depending on the requirements. Check this article to understand better about the conditions:

Sorry for the inconvenience, we have fixed this compatibility issue with the very latest version of the theme, we kindly request you to please update your theme to the very latest version 7.0.7, and the Porto functionality plugin as 3.0.7 and it should solve your issue.

Actually, Yes, You can first create a new custom layout as I told you in my previous message while editing it you can import a pre-built layout using PORTO Studio: https://www.portotheme.com/wordpress/porto/documentation/porto-studio/ then simply customize it as per your need.

Actually, there is no need to customize the theme core files, by default our PORTO theme provides an option in which you can design a single product page using the page builder plugin you are using on the site as per your need.
Simply navigate to the Dashboard >> Porto >>Template Builder >> Single Product >> Add new >> https://postimg.cc/r0ZZHD7B >> create a new layout when the editor opens you have the control to design according to the needs.
You can set the product meta after the add-to-cart as well. Here is an example: https://postimg.cc/HcL8xnjs I hope you understand.

To solve your issue simply navigate to the Dashboard >> Porto >> Template Builder >> Header >> From there you can edit the header block with the page builder you are using on the site: https://postimg.cc/qg0FD5VM When the editor opens you can simply remove the mini cart widget and save settings. The screenshot is of the Elementor however the process is the same for the WP bakery as well.
